With Thanksgiving quickly approaching, here is a nice alternative to the traditional pumpkin pie that many are opting out of this year in the name of losing weight and getting fit.  It is also wonderful for those that are watching or restricting their intake of certain foods as it is gluten-free, fat-free, low in calories and void of refined sugars.  Even your children will love it!

Pumpkin Pudding

1 cup Plain Non-Fat Yogurt
1/2 cup Canned Pumpkin Puree
1 tbsp Agave
1/2 tsp Pumpkin Pie Spice

I tried to measure the exact amounts I used and it did not come out tasting as good as when I winged it - so by all means, start with a cup of yogurt and wing it!  Add enough pumpkin to make it a nice orange color.  Add agave until it is no longer bitter (plain yogurt usually is).  The tricky part is the spice.  Too much and it will be grainy (which happened twice when I was trying to measure - once with 2 tsps and then with 1 tsp, so the 1/2 is a guess).

Servings 2; Calories per serving 110; Fat 0g; Sodium 85mg; Carbs 21.5g; Protein 6.5g

Totally! Then it would be vegan, too!  As long as the yogurt is plain.
