3 mejool dates  cut in four slices  ( pit removed)   This is optional

1 cup  8 grain hot cereal mix ( I likeBobs red mill but there are several on the market  l)

1/2 cup whole wheat pastry flour organic

1/2 cup  organic unbleached all purpose flour

1 t salt

1t baking soda

1t baking poweder

1/4 vegan margerine soft

1/4 soy yougert

1/2 cup organic cane sugar

11/4 cup soy milk ( or rice ) 

1T  organic apple cider vinigar

combine  soy milk and  cider vinigar let stand   2 -3 min 

oil  12 muffin cups with  canola oil or    a bit of vegan margerine

Pour the  soy milk  mixture over the  cereal mix in a  med bowl   stir and let sit  about 10 min

mean while  preheat oven to 400  and  measure  remaining ingredients

combine the  dry inredients

cream the  soy yogurt ,  margerine and sugar together   ,    then add  the dry ingredients and  the  soaked  cereal mix

stir just til  blended and no dry remains

spoon into   the muffin cups  

If using the dates ( and  they are  awesome )  drop one slice per muffing  and  poke in slighty

bake for  15 min

let cool in pan about  3 min and then  remove to cool    ( you may need a  butter knife but be careful not to  tear the muffin

cool completely if you can wait that long  

These are  very low fat and all natural organic

one is very filling 

my lil guy thinks the date is a drop of jam

I make these as I am cleaning up dinner and they are ready in the morning
