I've been so down and out the past few days I haven't had a chance to share, but my dinner turned out awesome!

Handmade Hawaiian rolls w/pineapple & coconut

Tofurkey in an orange glaze

Cornbread stuffing w/pears & pecans

"Cheesy" potato casserole with chips on top (made with nutritional yeast and Tofutti sour cream)

Green Bean Casserole

Caramel Apple Pie

Pecan Pie

Homemade cranberry sauce (I'm proud of this one because straining all of those cranberries was a giant PITA)
We also had maple glazed root veggies and mashed potatoes with cashew gravy but didn't get pics of those I guess. So much yummy food and not one animal was harmed in the making of this feast. :)

It's amazing to see an entire meal done Vegan. And everything looks so delicious, especially the pecan pie.... Nom nom nom!!!
Well tofu itself tastes completely different than the Tofurkey or other processed products like that...they add vital wheat gluten in with it. It actually tastes pretty similar to turkey in my opinion, although it's been a while since I ate meat. :) Plain tofu pretty much takes on the flavors of whatever you cook it with or in.
The recipe for the rolls was not vegan, so I made some changes:
Hawaiian Dinner Rolls
Ingredients
-
1 can (8 ounces) crushed pineapple, undrained
-
1/4 cup warm pineapple juice (70° to 80°)
-
1/4 cup water (70° to 80°)
-
1 egg (I used Ener-G Egg Replacer)
-
1/4 cup butter, cubed (I used Earth Balance soy spread)
-
1/4 cup nonfat dry milk powder (I used powdered soy milk)
-
1 tablespoon sugar
-
1-1/2 teaspoons salt
-
3-1/4 cups bread flour
-
2-1/4 teaspoons active dry yeast
-
3/4 cup flaked coconut
Directions
-
In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add coconut.
-
When cycle is complete, turn dough onto a lightly floured surface. Cover with plastic wrap; let rest for 10 minutes. Divide into 15 portions; roll each into a ball. Place in a greased 13-in. x 9-in. baking pan.
-
Cover and let rise in a warm place for 45 minutes or until doubled. Bake at 375° for 15-20 minutes or until golden brown. Yield: 15 rolls.
Looks great Katie. Sorry you were sick and didn't get to enjoy the day like you wanted to.
Have to say, we did our Tofurkey and DH really liked it, but I am not a fan. The flavor and texture is just not for me. Oh well.
KT--I can't even eat the Tofurkey because of the gluten, although I do think it tastes good. I think next year we will probably make something else for the main dish.
Looks good Katie! I've never heard of Tofurkey before. When I was growing up we used to eat lots of yeast crepes, bbq tofu, tempe, and Gluten (which too forever and a day to make). Yum!
