WOW a whole week went by without any posting. I'm sorry lol. I just want to let you know that I have not jumped, fallen, or tripped off of the vegan wagon. However trying to go over everything i ate this last week will be too hard soooo i will just put down thanksgiving.

THANKSGIVING. was good. I wasn't as deprived as i thought i would be. But I have to admit I was really missing the stuffing. surprisingly that was all I missed. I made the most fantastical cranberry sauce, vegan green bean casserole which was also good, and harvest bean corn stuff lol. I made an attempt at making tofurky but that wasn't so great, so that was left at home. Everything was a big hit so i gave myself a pat on the back.  I got lots of good family pictures on the farm too so i am going to be a showoff because I rock. MUAHAHAHAHA.

myself looking kinda sickly for some reason lol. Im not sure if i like my natural hair color. there is still a tiny bit of old color on the ends of the top layer of my hair so I am almost 100% natural.

I would looooove to live out in the country and have lots of gardens especially after spending a day there.

I have been eating leftovers the last couple of days and am glad to see that they are dwindling lol. I found a very interesting vegan blog about baking called nom nom nom. And since I am on a phantom period I am going to make the chocolate peanut butter shells recipe. which is going to be my dinner because the kids are going to be gone for the night. So dh and I are going to cuddle up and watch the kill bil movies with some yummmy chocolate peanute butter cookies. I am sooooo excited lol. I will go ahead and post the recipe for those interested.

Chocolate Peanut Butter Shells


Dry:
1-1/2 cups flour
1/2 cup baking cocoa
1/2 teas. baking soda

Wet:
1/2 cup margarine, softened
1/2 cup sugar
1/2 cup brown sugar, packed
1/4 cup soy milk
1 teas. vanilla

Peanut Butter Filling:
1/2 cup sifted powdered sugar
3/4 cup peanut butter- chunky is great!
1/3 cup chocolate chips

Preheat oven to 350. Line a cookie sheet with parchment paper.

In a small bowl, sift together the flour, cocoa powder and baking soda. In a large bowl beat together margarine, sugar, brown sugar. Add milk. Beat well. Gently mix in the flour mixture about 1/3 at a time until incorporated.

For the filling, combine powdered sugar and peanut butter in a mixing bowl and beat until sugar is absorbed and peanut butter feels stiffer. Add chocolate chips. It should be a pretty solid mixture because you want to form it into little balls. If it’s still oily or thin, add a little more powdered sugar.

Using a piece of dough just a bit smaller than the size of a golf ball, flatten the dough into a disc on a piece of parchment paper. Place a heaping teaspoon of the peanut butter mixture on the center of the dough. Carefully fold chocolate dough over the peanut butter ball and seal the edges. Roll dough into a ball. If the dough gets dry, add a splash of milk to moisten it.

Place balls on baking sheet, seam down, about 1 inch apart. Bake for about 8 minutes, until the surface begins to slightly crack. Let cool for 1 minute on the sheet then transfer to cooling rack.

Makes about 2 dozen.

*The dough should be similar in texture and malleability to Play-doh.

Yay for you!! I'm glad you enjoyed Thanksgiving and didn't feel like you missed anything! Great pics!! Your kiddos are so cute!! LOL to the "driving with eyes closed"...funny!  Your MIL's hair, nice -- good job! And, yay for the "farm" -- looks like lots of fun!! Hope you and DH enjoy the cookies and time alone!
