What do you do with your leftover pumpkin pie filling?
Here are some ideas:
*Just put it in a buttered oven-proof shallow bowl or dish, and put marshmallows on top and into the oven it goes. If they are large marshmallows, cut them in half and lay the cut-side down on top of the pumpkin puree or pie filling. When the marshmallows have melted, remove from the oven and sprinkle a few chopped nuts over it if you like. Or drizzle some caramel Ice Cream Topping over the marshmallows and serve. (Another option is to simply sprinkle the marshmallows with cinnamon.)
*Make chocolate cupcakes. Fill each paper liner half full, then add a teaspoon of pie filling and cover with more cake batter. Test with a toothpick before removing them from the oven. They might require an extra minute to bake. Then you can take the remaining pie filling and add some cinnamon, or nutmeg and a dash of ground cloves and cover the tops of them too.
*pumpkin cookies!
*Make muffins with it (use in your fav muffin recipe).
*I've replaced the bananas in banana but bread, with pumpkin. Tasted really good! You can even use both (bananas and pumpkin) in the recipe.

how about mixing it in with softened vanilla ice cream and some cool whip, you can refreeze it and serve it as a frozen dessert in individual servings or you can put it in a pie shell and put coolwhip over the top and drizzle caramel over the top to serve
