Funds were tight and things are a bit up in the air at my house so I planned to send the boys to dads and just wing a Thanksgiving dinner with Angel. We didn't have a turkey but that was o.k....we'd just find a little something and be content. 

Well, my oldest son called me and asked if I wanted a turkey. I said sure. I was a bit concerned about it being big but knew the boys would devour it the next day. I also was going to share whatever Angel and I had for Thanksgiving with my neighbors. So I thought ...great, we'll have a turkey to share. I then pulled together a few dollars to buy the ingredients for a couple of other dishes. 

This is what the menu was to be:

~ Turkey

~ Collard greens (Glory greens from the can this year.)

~ Macaroni and cheese

~ Dressing

~ Cranberry sauce

Well, when the turkey was dropped off I was surprised at the size. It looked like a nice large....chicken. After cooking everything, I was concerned about having enough. As I began to cut the meat off the turkey, I realized there was no meat on the breast side. Seriously. This turkey was so small, Angel, my 4 yr old,  could have eaten it by herself. It weighted a whopping 7 lbs 2 oz. I think it was genetically altered....lol. As I was cutting it up, Angel kept coming back for sample pieces. It smelled delicious and was moist. But, oh my word, there was so little white meat that I had to give the legs and wings to the neighbors. 

All in all it was o.k. until my sons returned home wanting turkey. They couldn't believe there so little left. You would have thought I did it on purpose. 

Are you wondering why my boys wanted to eat at home after coming from dinner? They say no one cooks like me. Aw isn't that sweet? I am hoping I can do better this Christmas. Hopefully the ham will be big enough.

Hugs! You did what too few of us do - you made do with what you had and did it well! No wonder your boys wanted to eat what you made. :)
