I'm starting the week with a great start. Yesterday I started my new eating plan. I'm trying to eat smaller portions and start eating healthy snacks. In my past life I would snack on chips or cookies, so having to switch from bad snack to no snack to snacks now might be hard for me as I have to make a conscious effort to eating snacks during my busy day as an unemployed now stay at home mom. I thought it might be nice to show you all my week's menu. Please note I am a vegetarian, so anything that says chicken or would normally have a meat product in it is now a soy product. I find being a vegetarian allows me to cook healthier and finally get the correct amount of good protein in my body.

Also all my meals are the healthier version. Most fats are reduced to a tablespoon of olive oil or peanut oil for "frying". On average each meal has about 3 grams of fiber and protein. If an item does not have the amount of fiber I would like then I add Benefiber as it's a tasteless additive. On of my favorite lunches is the Chicken Tenders, I use the Smart Life brand and for the whole box which contains six tenders has 32 grams of protein. From my last posting I said my mini goal would be to add more fruits and vegetables to my diet and with this menu I have. I started to eat this way last week minus the snacks and better breakfast and I have lost another pound. Thus far I have lost 32 pounds since the birth of my son on September 27, 2009. I'm really feeling good about my new eating ways. I still need to get into a groove with working out. I know you can't expect perfection right away so I am taking my time and I know I can do this. All these little changes will add up to one big one. I look great, I feel great, I'm losing weight.
