2 lb corn beef roast
4 small potatoes, peeled and chopped
1/2 lb carrots, peeled and chopped
1 lb cabbage, cut into wedges
3 cups hot water
2 Tbsp apple cider vinegar*
In a 4-6quart crockpot, add carrots**. Rinse cornbeef*** under cold running water and pat dry with paper towels. Place in crockpot and sprinkle contents of seasoning mix on top. Add potatoes on top and around sides. Then add cabbage. Add water and vinegar. Cover and cook on High setting for about 4 hours or until corn beef is cooked through.
*If you don't have/can't find in supermarket apple cider vinegar, you can use regular vinegar.
** I added the potatoes first. Really didn't make a difference
*** I used an already precooked portion of cornbeef (frozen, made cornbeef hash a few weeks back and had 1lbs left of a 3lb roast) when I made this recipe. So, I didn't need to rinse under water or use the seasoning packet.
