This recipe is very simple to make and very tasty.  And the best part ........ no processed garbage going into your kids, just protein, dairy and fruit.


Crust:

2 cups of unsalted peanuts.  I went with the unprocessed still in the shell kind, the kids and I had so much fun sitting on the porch chatting and shelling peanuts together :)

1 cup sugar.  I use raw sugar because it is less refined.

1 egg

1 tsp baking powder

preheat oven to 350. put the nuts in a food processor and ground until they are peanut butter. put into a bowl and blend in the other ingredients. press mixture into a greesed (I use unsalted butter) pie plate and bake for 10-12 minutes.


while this is baking you can start the filling, you will need

3 cups of fresh strawberries (or any mixture of berries)

1-2 cups organic plain yogurt or get a flavor as long as they use natural flavoring

cut strawberries into bite sized pieces over a bowl (you want the juice that drips out of them too), place strawberries and any juice that dripped into a pan and heat on low (this makes the berries release their natural sugars) for 3-5 minutes.  set aside and allow to cool.  once cool blend 1 cup of yogurt in. 

once the pie shell is cool pour the strawberry mixture into it and top with the remaining yogurt.  chill in fridge.
