Lemon Cream Cheese Loaf
1/2 cup butter or hard margarine
1 1/4 cups of sugar
2 large eggs
3/4 cup milk
Grated rind of 1 lemon
2 cups flour
2 teaspoons of baking powder
1/4 teaspoon of salt
8 oz. of cream cheese cut into 1/4" cubes
Juice of 1 lemon
1/4 cuo of sugar
Cream butter and sugar.
Beat in eggs 1 at a time
Mix in milk and lemon rind.
Stir flour, baking powder and salt in a bowl. Add to batter. Stir to moisten.
Fold in cream cheese.
Turn into a greased and floured loaf pan.
Bake at 350 for 1 hr. and 20 min, [mine are always done in 50 min. So watch!]
Stir lemon juice and sugar. Heat in microwave until sugar dissolves.
Poke holes in top of loaf with a toothpick.
Spoon lemon juice over loaf.
Let stand for 10 min.
Turn onto rack to cool.[I turn my loaf onto aluminum wrap first then pour juice over it.]
That way you can wrap it and the moistness stays in the loaf.
