So today is my husband's 23rd birthday, it's been our tradition in the past to eat at Red Lobster's for special occasions like birthdays and what-not, but it's stinking expensive and getting more so as our boys are getting older.  So, instead of going to Red Lobster tonight I made shrimp scampi, Red Lobster's cheddar biscuits, and garlic asparagus, it was SO good!  I'd made shrimp scampi before but didn't write down how I made it and all, so I made sure to do that this time, and since I did I figured I'd share the recipes from our menu tonight =)  It's all fattening, don't say I didn't warn you =P

Red Lobster's Cheddar Biscuits

Garlic Asparagus

1 bunch asparagus - cut off ends to throw away and cut the left over portion in half

1 cup water

1 Tbsp Olive Oil

2 Tbsp Butter

2 Tbsp Chopped Garlic

1/4 tsp. salt

1/4 tsp. pepper

Put water in deep pan.  Cover and bring to boil.  Add asparagus and steam 8-10 min.  Drain water, add olive oil, butter, chopped garlic and salt and pepper.  Cook until desired tenderness is reached, tossing occasionally. 

Shrimp Scampi

3 14 oz. bags, raw, deveined, tail-off shrimp

1/2 cup Chopped Garlic

1/4 cup Chopped Parsley

4 Tbsp. Olive Oil

1 Cup Butter

1/4 cup lemon juice

1 tsp. salt

1 tsp. pepper

Fill large pot with water, cover and bring to boil.  Add raw shrimp, cook 3 minutes, then drain.  In desired pot/deep pan saute garlic in olive oil over Med-High heat.  Add butter, allow to melt.  Add cooked shrimp, lemon juice, salt, and pepper, mix thoroughly.  Cook down 8-10 min., stirring occasionally.  Immediately before serving, stir in parsley.

Yum, this sounds delicious! I am going to  have to try your recipes - our Red Lobster burned down :( and I really miss their biscuits.
