Only 3 more mornings without my beloved cup of coffee! I really gave up something very much a part of my everyday life for Lent this year...and though it's been a long (and sluggish) journey, I'm so proud of myself for sticking to it! Please believe that come Monday morning, I will have a giant cup of extra strong Italian roast coffee in my new Big Bubba coffee mug lol!

We're hosting Easter this year, so my weekend will be busy. After 9:00am Mass, we'll come back to the house for brunch with both sides of the family. The afternoon will consist of Easter egg hunts, Easter basket unveiling, dessert-making, cocktails, and movie watching (Greatest Adventures of the Bible for the kids, Passion of the Christ for the adults). Around 6pm we will sit down to a delicious 5-course dinner (all taken from my favorite food magazine, Cooking Light):

Drinks: Champagne Limoncello Cocktails, red & white wines

Appetizer: Deviled Eggs with Smoked Salmon and Herbs

Soup: Carrot Soup with Yogurt

Salad: Asparagus and Spring Greens Salad with Gorgonzola Vinaigrette

Main Course: Baked Ham with Rosemary and Sweet Vermouth, Roasted Fingerling Potatoes and Baby Artichokes, and Parmesan and Thyme Rolls

Dessert: Lavendar-Scented Strawberries with Honey Cream

Overall, I'm very excited to feed my family this delicious meal on this holiday commemorating Jesus Christ and how he died so that we could live forever in His Kingdom of Heaven, but (as so many other holidays) I also can't wait for it to be over so I can stop stressing about how clean the house is, how groomed the dog looks, how well-prepared the food is, how nice the decorations are, how dressed up we all are...blah, blah, blah. I was raised in a family where every holiday was a big celebration, so I suppose it's only natural that I continue the traditions, but at times it really does seem overwhelming; and once in awhile, I even catch myself wishing for just a calm, laidback, relaxing evening at home...just the three of us.
