These have been kid-tested on my DD.

Quick Green Bean Casserole

2 cans green beans

4 all-turkey hot dogs

2 small baked potatoes

unsalted saltines

Monterrey jack cheese

Stick the potatoes in the microwave in a small tub of water for 5min or so (until potato is soft). Dump the green beans into a tub or casserole dish and cut the hot dogs into bite-sized pieces while the potato cooks. Skin the potato or not (your call) and add to the green beans and hot dogs. Mix :) Sprinkle with cheese and crush saltines on top. Stick either in over or directly in microwave until the center is warm. Enjoy with wheat rolls :)

Cheater's Chicken Spaghetti

(It's called cheater's cuz I don't make the sauce, but it would be healthier if you did!)

Pasta (I like bowtie but any works, really)

Jar of marinara (I like 4 cheese) 

2 chicken breasts

Butter (I use SmartBalance Heart Healthy)

Italian seasoning

can cream of chicken

cheddar cheese

Pretty simple. Boil water. Cook pasta. In the meantime, melt enough butter to cover the bottom of a skillet. Throw your chicken in there to cook it, and sprinkle the chicken with Italian seasoning (I found an Italian seasoning grinder at Walmart - it's awesome!). Strain the pasta, and leave it in the strainer. Use the pot to heat up the marinara and cream of chicken, and mix together. Cut chicken into bite-sized pieces. Throw it all together and sprinkle cheese on top. Enjoy with a salad :)

Spiffed-up Tortellini Alfredo

Bag tortellini (frozen is cheaper)

Bag fresh spinach (or canned spinach, if you prefer)

Jar Alfredo sauce

Deli ham (or turkey bacon if you don't eat pork)

Boil water. Cook pasta. If you bought fresh spinach, I like to toss it in a skillet with a little SmartBalance until it wilts. Cut ham into bite-sized pieces or cook turkey bacon and tear to pieces. Strain pasta. Dump Alfredo sauce on top. Mix everything together. Enjoy with wheat rolls, salad, both, whatever :)
