Chef Fabio's meatballs positively cannot be remade as vegetarian "neatballs," or turkey balls (been there, done that). You have to use ground beef. (I like all-natural.)
What makes them so good? You cook them in the sauce, for one thing. And they have ricotta and grated parmesan.
Once they've tried these tasty morsels, your children will worship you and your husband will get down on his knees and propose marriage for the second time.
Well, the least he'll say is, "Great meatballs, hon."
