Make my Hot Rum Coconut Chai and no one - I mean NO ONE - will be able to pry it out of your keyboard-pecking paws. I know I'm not sharing, not even with my husband. He will have to make his own.

Mix up this rich and spicy night-cap by brewing 2 teabags of Celestial Seasonings Indian Spice Chai in 1 1/2 cups boiled water (I do the decaf chai). After about five minutes - to let the flavors bloom - add 1/2 cup hot milk (I tried both SO Delicious Coconut Milk and Silk Soy - both unsweetened, and liked them both). As the milk warms, add two tsp. turbinado sugar and two heaping tsp. coconut oil and allow to dissolve. (Adjust for sweetness, especially if using presweetened milk.)

The coconut oil will form fat globules, just like butter. Pour into your favorite mug and add a capful of rum. There really will be enough for two cups, but remember, sharing is an act of will! Cheers!
