I found a recipe for a cool summer treat. They turned out really good!

MAD MOM'S POPSICLES (my oldest son came up with this name!)

Ingredients:

Apple Juice - 4 cups

Lime-Flavored Jell-o (gelatin powder) - 1 pkg or 3 oz.

Applesauce - 1 cup (we even used cinnamon flavored applesauce and it turned out great!)

Supplies needed:

Popsicle sticks

Dixie Cups

Tin Foil

1. Pour half of the amount of apple juice into the saucepan. Heat on medium-high until just starting to boil.

2. Remove the saucepan from the heat and add the jell-o package. Stir until dissolved.

3. Add the second amount of apple juice and the applesauce. Stir. Pour the mixture into the dixie cups to 3/4 full. Place a piece of foil over each cup. Cut a small slit in the middle. Fit the popsicle sticks in through the foil. Freeze. To remove the popsicle, run hot water on the borrom of the cup until the popsicle slides out. Makes 10 popsicles. Note: Freezing does take a few hours due to the applesauce!

We are going to make different flavored popsicles (watermelon, strawberry, grape, wild berry, etc) since they have become such a hit! I also doubled the recipe when I made it to make 20 of them...Hope you like them as much as us!
