I have a recipe here that might help. My son will no eat veges. I try to hide them in his mashed potatoes or rice and somehow he'll keep the rice/ potatoes in his mouth and the veges he spits out. Today i tried this recipe which is like a lil mini quiche for babies and my son actually ate it. So it's either he liked it or he was just really hungry haha It includes egg which many toddlers like so good luckTongue out

 

Vege Rounds

3 eggs

1 cup of milk

1 cup of self rising flour

2 cups of frozen mixed veges

Vegetable oil( i just used PAM)

Salt and pepper to taste

1 Preheat oven to 300 degrees

2 Mix the eggs and milk in a bowl until smooth, then add the flour and mix until smooth. Add the veges and stir well.

3 Pour the mixture evenly into well oiled muffin tins, filling each 2/3 of the way full.

4 Bake for 10-12 mins until the tops are golden  brown.
