So I got this Recipe out of the September Issue of Parents!!!!  It's delicious & my girls devoried it!!!!

 

                                                 Satay Wraps

  • 1/2c. beef of chicken broth
  • 1/3c. smooth peanut butter (I used crunchy cuz I didnt' have any peanuts)
  • 2tbs. corn starch
  • 1tbsp vegetable oil ( I used EVOO)
  • 1tbsp grated fresh ginger ( I used 1/2tbsp of dried ginger cuz i didn't have fresh)
  • 3 garlic cloves, minced
  • 1 lb. lean ground beef
  • 1c. shredded carrots
  • 1/4c. thinly sliced green onions
  • 2tbsp soy sauce
  • Boston lettece leaves
  • chopped peanuts (optional)
  • ciltrano (optional)

 

  1. in a jar with a tight-fighting lid, combine broth, peanut butter, & corn starch.  shake to blend well; set aside.
  2. In a large nonstick skillet, heat oil over medium-high heat and add ginger and garlic.  cook 30sec, then add beef and brown, breaking up with a spoon, until cooked through, about 5mins.  shake sauce again, then pour into skillet and cook for 2-3mins, until thickened.  Remove from heat, stir in carrots, green onion, and soy sauce.  Serve wrapped in lettuce leaves, garnished with peanuts and cilatro, if desired.

makes 6 servings.

Nutrition per serving; 324cal; 18g protein, 25g fat; 7g carb; 23mg calcium; 2g fiber

Sep. 9, 2007 at 1:50 AM I'm gonna try it.  Doesn't mean it'll turn out good.  I tried to make lunch for James the other day.  Sort of a late brunch thing.  Anyway, I made hash browns, an omelet, and some sausages.  The only thing that wasn't burnt was the sausages.  I was so mad because I asked for help and James said I had to learn to cook on my own.  So I told him that he had to eat it and pretend to like it.  He said he was good and I know that he lied.  I tried some of it.
