So I got this Recipe out of the September Issue of Parents!!!! It's delicious & my girls devoried it!!!!
Satay Wraps
- 1/2c. beef of chicken broth
- 1/3c. smooth peanut butter (I used crunchy cuz I didnt' have any peanuts)
- 2tbs. corn starch
- 1tbsp vegetable oil ( I used EVOO)
- 1tbsp grated fresh ginger ( I used 1/2tbsp of dried ginger cuz i didn't have fresh)
- 3 garlic cloves, minced
- 1 lb. lean ground beef
- 1c. shredded carrots
- 1/4c. thinly sliced green onions
- 2tbsp soy sauce
- Boston lettece leaves
- chopped peanuts (optional)
- ciltrano (optional)
- in a jar with a tight-fighting lid, combine broth, peanut butter, & corn starch. shake to blend well; set aside.
- In a large nonstick skillet, heat oil over medium-high heat and add ginger and garlic. cook 30sec, then add beef and brown, breaking up with a spoon, until cooked through, about 5mins. shake sauce again, then pour into skillet and cook for 2-3mins, until thickened. Remove from heat, stir in carrots, green onion, and soy sauce. Serve wrapped in lettuce leaves, garnished with peanuts and cilatro, if desired.
makes 6 servings.

I'm gonna try it. Doesn't mean it'll turn out good. I tried to make lunch for James the other day. Sort of a late brunch thing. Anyway, I made hash browns, an omelet, and some sausages. The only thing that wasn't burnt was the sausages. I was so mad because I asked for help and James said I had to learn to cook on my own. So I told him that he had to eat it and pretend to like it. He said he was good and I know that he lied. I tried some of it.
