Lasagna Casserole
Recipe #1305153 ratings In the mood for lasagna but not the work-try this. Serve with a salad and garlic bread.by mamacancook8 servings 20 min 10 min prep
1 (8 ounce) bag egg noodles (medium size noodles) 1 lb ground turkey or ground beef, seasoned with salt, pepper, italian seasoning 1 (26 ounce) jar spaghetti sauce 1 (24 ounce) container large curd cottage cheese 1/2 cup parmesan cheese 1 cup shredded mozzarella cheese salt and pepper 1/2 teaspoon garlic powder
- Mix cottage cheese,parmesan cheese and 3/4 cup of mozzarella cheese with salt,pepper and 1/2 teaspoon garlic powder. Set aside.
- Cook meat - season to taste, drain and add spaghetti sauce to meat.
- Cook and drain medium egg noodles al dente according to directions.
- Return to pot.
- Add spaghetti sauce/meat mixture and cheese mixture; stir to blend and heat over medium heat.
- Empty into large casserole dish and sprinkle remaining mozzarella cheese on top.
- Place under broiler just to melt cheese (you may skip this step and add all the mozzarella w/cheese mix if you do not want to place under broiler).
- Serve with a salad and garlic bread.

Cheesy Shrimp-and-Grits Casserole
Ingredients
4 cups chicken broth1/2 teaspoon salt
1 cup regular grits
1 cup (4 ounces) shredded sharp Cheddar cheese, divided
1 cup (4 ounces) shredded Monterey Jack cheese with peppers
2 tablespoons butter or margarine
6 green onions, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 pound small fresh shrimp, peeled and cooked
1 (10-ounce) can diced tomatoes and green chiles, drained
1/4 teaspoon salt
1/4 teaspoon pepper
Preparation
Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil in a large saucepan; stir in grits. Cover, reduce heat, and simmer 20 minutes. Stir together grits, 3/4 cup Cheddar cheese, and Monterey Jack cheese. Melt butter in a large skillet over medium heat; add green onions, bell pepper, and garlic, and sauté 5 minutes or until tender. Stir together green onion mixture, grits mixture, shrimp, and next 3 ingredients. Pour into a lightly greased 2-quart baking dish. Sprinkle top with remaining 1/4 cup shredded Cheddar cheese. Bake at 350° for 30 to 45 minutes.Yield

This is my own recipe-I just copied it from my post on recipezaar (I go by mamacancook on there...)
Last Christmas I made a batch of each (plus a cinnamon honey butter I'll post in a separate post) I placed each in 4oz canning jars and gave as a "butter sampler" for gifts-They went over very well. My favorite is apricot,but my daughter and hubby loved cherry. My best friend and her son loved the blueberry....It's just a matter of taste,but if you want to make as gifts I know they went over very well with my friends and family
Recipe as follows (just substitute your favorite flavor of jelly)
Apricot Butter
Recipe #202008Quite yummy and makes nice gifts in a quick pinchby mamacancook 6 servings 1 day 10 min prep Change to: servings US Metric 1 cup butter, room temp 12 ounces apricot preserves 1/4 cup powdered sugarAllow butter to come to room temp (I used salted,but you could use unsalted if you have sodium issues).
- Mix butter,preserves and powdered sugar with hand mixer.
- Allow flavors to come together(overnight is good) before placing in fridge.
- Allow to soften when serving.
- Makes 6 4oz canning jars for gift giving.

Here's mine; Taco casserole
Brown 1 ib. of gr. beef or gr. turkey, drain, and add 1 packet of taco seasonings. Let simmer. Meanwhile, make a small pot of rice, and garlic toast. Add 1 can of cream corn to the meat mixture, and let cook on med. heat for about 5 minutes or so, and then serve over rice with tst. on the side!
Cheesy Mexican Chicken
Chicken breasts (however many you wanna eat!) browned in a large deep skillet. Then add water and taco seasoning and cook completely. Once cooked, remove chicken
Cooked rice. Once cooked, add salsa and put into the deep skillet. Place chicken on top and put lots of cheddar cheese on top of that. Cook on low until the cheese gets "melty" :-)
Pretty quick meal....
Grilled Chicken served over baby spinach and romaine lettuce with raspberry vinaigrette drsg
Start off by having hubby grill the already seasoned chicken ( we use onion powder, garlic powder, red pepper flakes, paprika, and sometimes oregano-I keep this on hand, can also use any other seasonings you like) I usually let the chicken sit all day (I take a fork to the chicken and poke little holes and make sure the seasoning gets IN the chicken too)
Take raw baby spinach and romaine lettuce, toss this with raspberry vinaigrette, throw some alredy sliced carrots as well.
When chicken is grilled, cut into thin strips and lay over salad, top with sliced almonds and more raspberry vinaigrette drsg-ENJOY!
I came up with this after finding out that I also have a gluten and casein intolerance. I use the almonds in place of bacon bits-I need something crunchy,lol. And this is the ONLY way I can get my hubby to eat spinach. He eats over 3/4 of it everytime I fix it!

Here is my recipe for Maryland Crab Cakes...
1/4 cup chopped red peppers
1/4 cup chopped green onions
1/3 cup mayonnaise
2 and 1/2 Tbs. dijon mustard
1 Tbs. lime juice
1 and 1/2 Tbs. Old Bay seasoning
2 cans lump crab meat or 1 and 1/2 cups of fresh blue crab meat
1 med. egg - beaten
1 cup seasoned breadcrumbs
3 Tbs. butter
1 tsp. garlic - minced

Combine red pepper, green onions, mayonnaise, lime juice, Old Bay, mustard and garlic together into a large mixing bowl and stir well.
Then add the egg, crab meat and about 1/3 of the bread crumbs and stir well until the mixture thickens and is hard to stir.
Divide the mixture into four equal sized balls and roll the crab balls in the remaining bread crumbs until they are well coated.
Heat the butter in a non stick skillet on medium heat.
Carefully drop the crab cakes into the skillet, making sure that they have space between each other and saute' until crab cakes are golden brown on each side.
I usually top each crab cake with aioli sauce and serve on a bed of mixed greens!

Here's a recipe we like at our house
3/4 lb. boneless beef sirloin steak steak, 3/4" thick*
Vegetable cooking spray
2 cups sliced mushrooms
1 medium onion, chopped
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup OR Campbell's® Healthy Request® Condensed Cream of Mushroom Soup
1/4 cup water
2 tbsp. Dijon-style mustard
4 cups hot cooked rice, cooked without salt
Chopped fresh parsley (optional)
Directions:
SLICE beef into very thin strips.
SPRAY nonstick skillet with cooking spray and heat 1 min. Add mushrooms and onion and cook until tender. Remove vegetables. Remove skillet from heat.
SPRAY skillet with cooking spray. Add beef and cook until browned and juices evaporate, stirring often.
ADD soup, water, mustard and vegetables and heat through. Toss rice with parsley, if desired. Serve beef over rice.
1 cup water
1/2 cup soy margarine
1 cup potato starch flour
1 tablespoon sugar
1/4 tsp salt
4 eggs
oil for deep frying
cinnamon sugar
In a 2-qrt saucepan, heat water and margarine until the mixture boils. Remove pan from heat and stir in, all at once, the combined floure, sugar, and salt. Continue stirring until the mixture forms a ball and pulls away from the sides of the pan. Then, with an electric mixture, beat in the eggs, one at a time, beating well after each addition.
Meanwhile, heat the oil for deep frying. Use either an electric skillet set at 375 or an automatic deep fryer. Use at least 1 inch of oul in the skillet or add oil up to the marked line on the deep fryer.
Drop the batter into the heated oil by small rounded teaspoonfuls, a few at a time. Fry until golden brown, turning them to brown easily. They will puff up to about 1 1/2 inches as they cook (about 5 minutes altogether). Remove and drain on paper towels.
While still warm, sprinkle cinnamon sugar on top (2 tablespoons sugar to 1/2 teaspoon cinnamon)
Makes 3 dozen holes
I will fix these for special occasions, like Christmas and Josef's birthday. They are really good and my hubby says you can not tell the difference! We only RESTRICT the amount of soy that Josef's receives (soy has high amounts of estrogen in it, something we should not be putting in a young child's body). ENJOY!
I found this recipe in one of my Bette Hagman cookbooks-I LOVE her!
Ok here is one that I can get both my boys to eat:
EASY BEEF STROGONOFF
1 LB OF HAMBURGER OR GR TURKEY
SALT AND PEPPER TO TASTE
1 CAN OF CREAM OF MUSHROOM SOUP
1/4 CUP OF MILK
1/2 CUP OF SOUR CREAM
8-10 OZ OF EGG NOODLES - COOKED (USUALLY I MAKE MORE NOODLES BECAUSE MY LITTLE ONE DOESN'T LIKE THE MEAT SO MUCH)
BROWN GROUND BEEF, DRAIN. ADD SALT AND PEPPER TO TASTE. ADD CREAM OF MUSHROOM SOUP, MILK AND NOODLES TO BEEF. LET COOK ON MED HIGH HEAT FOR 5-8 MINS UNTIL SOUP IS HEATED THROUGH. LOWER HEAT TO LOW AND ADD SOUR CREAM. COOK FOR ABOUT ANOTHER 2-3 MORE MINUTES AND SERVE WITH SALAD AND CRESCENT ROLLS.

I'm gonna start with one of my crock pot soup recipes. :-}
Cheesy Chowder
1. 1 lb. bacon, cooked crisp and crumbled
2. 6 red potatoes, peeled and cubed
3. 1 sm. sweet onion, diced
4. 1 tsp. garlic salt
5. 1/2 tsp. ground red pepper
6. 1 - 4 oz. can chopped green chilies (do not drain)
7. 1 - 14.5 oz. can chicken broth
8. 1 qt. (32 oz.) half and half cream
9. 2 cans corn, drained
10. 4 cups shredded cheddar
~ Place first 7 ingredients in crock pot and cook on high for 3 1/2 hrs.
~ Add last 3 ingredients and cook another 1/2 hr., stirring after 15 mins.
This is a hearty soup that is a little spicy. :-}
