I made penne pasta and a simple tomato basil sauce, and a chocolate torta. Easy stuff. Dice tomatoes, add to a pan with olive oil, fresh garlic, salt, a little oregano, and thyme. Let it cook for about 30 minutes, then take it off the heat and add fresh basil leaves, torn up. Serve it with the penne, and meatballs if you want. The chocolate torta is very easy also. Melt 7 squares of dark chocolate and 3 generous tablespoons of butter in a double boiler. take off the heat and add 1 cup of sugar and 2 tablespoons of flour. In a separate bowl, beat three egg whites until they form stiff peaks. (Add a pinch of salt to make them stiffen faster) Fold in the egg whites gently, pour into a greased and floured pan, and bake at 300 degree oven for 25 minutes. It should still be soft in the middle. We eat it with whipped cream. Simple, yet good!!! The kids eat everything, its a miracle!
