I found this recipe last year and did it with my toddler class at the preschool I taught at before I had the twins.  It was a lot of fun and the kids loved it.  I would suggest double bagging the mixture though so that if the inside bag springs a leak you don't wind up with a big mess.

What you need to have:
- gallon Ziploc freezer bag (not the zipper kind they leak)
- 2 2/3 cups cold milk
- 2pkgs (4 serving size) instant vanilla pudding mix
- 1 can (15oz) solid-pack pumpkin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Graham cracker crumbs
- 25 small cups
- scissors
- 1 can whipped topping
- 25 spoons

What you need to do:
1. Combine milk and instant pudding in the Ziploc bag.
2. Remove the air and zip it shut.
3. Squeeze and kneed with hands until blended for 1 minute.
4. Add the pumpkin, cinnamon, and ginger.
5. Remove air and zip it shut.
6. Squeeze and kneed with hands until blended for 2 minutes.
7. Place 1/2 tablespoon of graham cracker crumbs in the bottom of small cups.
8. Cut corner of freezer bag and squeeze pie filling into cups.
9. Garnish with whipped topping.
10. Add a spoon.  Enjoy!

You could also make the "pie" in a pie pan or shallow baking dish if you don't need the individual servings.  I'd like to try making this with my 3yr old this year and serve it at Thanksgiving.  We used sugarfree instand pudding mix last year and it turned out tasting great and was less sugar for the kiddos.
