Ingredients:
1) 1lb. Chicken( 4 chicken breasts)
2) 2-3 c. Shredded Fiesta Blend Cheese( However much cheese you want to use)
3) 1 Medium onion
4) 1 Jar of salsa
5) 1 Pkg. of cream cheese
6) 2 tsp. cumin
7) 1 pkg. Flour tortilla shells
8) 2 Cans of Enchilada Sauce ![]()
9) * Green onion* (optional)
Directions:
Boil chicken. Drain. Chop chicken. Put into big sauce pan on stove. Add salsa, cream cheese, shredded cheese( however much you want), onion; mix together. Add in cumin, ( however much you want). * Add cumin last so you don't burn off the spice* While the mixture is heating, warm the torilla shells up in the microwave for about 15 sec and pour a little enchilada sauce in the bottom of the baking dish/pan. Once mixture is creamy and warm spoon a tbsp. or more into the torilla shells. Fold. Put in 13x9 baking dish/pan. Pour enchilada sauce over the enchiladas. Top with shredded cheese. Sprinkle green onion on top if you want. Cover with foil. Bake at 350 for 30 min. or until bubbly. Enjoy:)
