~~Making the most of leftovers!~~

Ok, so this week we had chicken in the rotisserie Sunday. We had carrots and peas on the side.  

We had Beef Roast with corn, peas and mashed potatoes on the side Monday .  We used the left over roast beef and had BBQ Beef sandwiches Tues! Ok, one down.....lol!

I took the chicken, picked off all the meat I could and put in a bowl with a lid and put in the freezer Sunday night. (Soup days are Wed and Sat at my house.) Wed I add to my lg pot, frozen chicken, leftover veggies from the previous couple days.... one can mixed veg or one small bag frozen and canned chicken broth. It's $1 a box at Walmart so...... very inexpensive! Season to your taste. When it's simmering I add pasta of your choice. My kids like orzo. Cook until done! How simple is that!

Thurs we did grilled cheese and chili from the freezer that I froze from last month.

Last night we had an easy noodle casserole I learned in middle school! 1 lb ground beef, 1 bag pasta, 1 can each cream of celery and cream of mushroom soups. Cook the beef and pasta in separate pans. Drain each. Mix all together. Put in a baking dish and top with cheese slices and bake until cheese melts.

Today...... it's freezing out! It's soup day so, the kids already asked for tater soup! I gave them the choice between veg beef or tater...... they always pick tater when it's a choice! It's super simple too! Just peeled and dice taters. Cook 'til tender. Drain. Add a can of broccoli cheese soup. I add diced ham that is in the freezer left from xmas and cover with milk. I add instant potatoes to thicken. Season to taste!

Tomorrow is leftovers and homemade pizza since it will be cold and snowy again!

That is so right!  I do this all the time to my days are different.  Thank you for sharing with all of us.
