So everyone know that I was super excited about finally getting Deceptively Delicious (Jessica Seinfield's new cookboook) and could not wait to try things out. Well, Josef is the PICKIEST eater you will meet, and so far we have a 99% approval!
My first try was oatmeal (with either sweet poato or pumpkin, we used pumpkin puree). Josef would eat this every morning if we let him! Even hubby LOVED this! I used vanilla almond milk in place of the skin milk, really yummy! Even though Josef and I both are severly intolerant to wheat, barely and rye, we do just fine with oatmeal.
The second one was french toast (with pumpkin puree, you can also use banana, pineapple, sweet potato, carrot, or sqaush puree). Josef ate the WHOLE batch! This one comes close to being his ultimate favorite! It smelled soooo yummy when I was making it up. The gluten free bread did great at soaking everything up, you could not even tell we were eating gluten free bread :-)
I made potato soup yesterday. This one did not go over that well with hubby, I liked it though. Hubby says he could taste "too much carrot", so next time I am going to decrease the amt of carrot. I agree, it did look too orange-Josef would not touch it because of this :-( This was really easy to make, and the subsitution of soy milk for buttermilk worked out really well too.
Yesterday I made doughnuts, something Josef and I had not had in MONTHS. The substitutions worked well, and hubby agreed that you could not tell I used GF flour. Just remeber to increase the baking soda/baking powder by 50% and add 1tsp of either guar gum or xanthum gum (if GF all purpose flour does not have it in already). These had pumpkin and sweet potato purees in them-by evening there were none left! So far this has been our all time favorite.
My first dinner out of this cookbook was the lasanga. I subsituted dairy sour cream with tofutti brand sour cream, but did use cow's milk cottage cheese. This one has sweet potato and cauliflower puree in it. The GF lasngna noodles were AWESOME in here! Josef had NEVER ate lasanga before, and he ate ALL of what was on his plate (about a 4x4 sqaure)! This one is going to be made when we have family over, it is sooo yummy!
By far the most of anything I have ever seen Josef eat was today's dessert. We do not do dessert here often, but I had some carrot puree in the fridge that needed used, so I made chocolate fondue. This fondue is made with cococa powder, carrot and avacodo purees, confectioners sugar and some vanilla. Also I subsituted Earth's Balance margarine in place of the butter. Josef ate 1 WHOLE apple plus a few slices from mine and hubby's! This kid did not eat an apple like this (the most we could get in him, even with pb, was a slice or two and he would not eat it whole either). It made a really big batch, so the rest is in the fridge :-)
I am planning on making the following in the week(s) to come: Pancakes with sweet potato, Green Eggs (with spinach puree), Peanut Butter and Jelly Muffins (with carrot puree), Meatball Soup (with carrot and sweet potato purees), Chicken Nuggets (with either brocolli, sweet potato or beet purees), Italin Meatloaf (with carrot puree), Tofu Nuggets (with spinach or brocolli purees), Quesadillas (with squash puree), Pink Pancakes (with beet puree, Josef REALLY wants momma to try the "pink pancakes'), Blueberry Oatmeal Bars (with spinach puree), Blueberry Cheescake Cupcakes (with yellow sqaush, blueberries and spinach purees).
There are TONS more I want to try in this cookbook, but the ones above are the most "requested" to try here. There is a receipe for hot chocolate even! I plan on making some sort of cupcake to take into Josef's preschool class and see how it goes over even.
If you have a picky eater, I URGE you to get this cookbook. I found it thru amazon.com for $10 cheaper than the bookstore.
I will keep everyone updated as the new recipes are tried out. Josef is my best food critic!

Ok.. I may have to try this.. Connor will only eat potatoes, fries, pretzels, chips and peanut butter (and i'm having a really hard time getting cman to eat bread now *sigh*) That's the limit of what Connor will eat :(
Are the textures different with the added stuff?
