Meat Loaf with Sweet & Sour Sauce

1 – 8 oz can tomato sauce
¼ cup brown sugar, packed
¼ cup vinegar
1 tsp prepared mustard
1 egg, slightly beaten
1 onion, minced
¼ cup crackers, crushed
2 lbs ground chuck
1-1/2 tsp salt
¼ tsp pepper
¼ tsp Accent

In a saucepan over medium heat, mix tomato sauce, with brown sugar, vinegar and mustard.  Stir until brown sugar dissolves.  Remove from heat.

Combine egg, onion, crackers, meat, salt, pepper, Accent, and ½ cup of the tomato sauce mixture.  Mix lightly but thoroughly and shape into a loaf.  Place in an 8 X 11.5 X 2 (2 qt) casserole dish and pour remainder of tomato sauce mixture over loaf.

Bake in 350 degree oven for 1 hour, basting occasionally.  Serve sauce separately.  If sauce appears thick, add ¼ cup water.

Serves 6 – 8

We like lots of sauce so I double the sauce recipe.  This makes great sandwiches, too!
