This week I decided to post a cookie recipe. Kids and adults alike seem to enjoy these! Contains fruit , coconut, and oats. Less that 100 calories per cookie!

Ranger Cookies

1/2 c. butter, softened

1/2 c. granulated sugar

1/2 c. packed brown sugar

1/2 tsp. baking powder

1/4 tsp. baking soda

1 egg

1 tsp. vanilla

1 1/4 c. all - purpose flour

1 c. quick cooking rolled oats

1 c. coconut

1 c. raisins, dried cherries, dried cranberries, or mixed dried fruit bits

In a large mixing bowl, beat butter with electric mixer on medium to high speed for 30 seconds. Add sugars, baking powder, and baking soda. Beat until combined. Beat in egg and vanilla until combined. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Stir in oats, coconut, and dried fruit.

Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheet. Bake at 375 degrees for about 8 min or until edges are golden. Cool on cookie sheet 1 min. Transfer to wire rack and let cool completely.
