I have the BEST chocolate cake recipe there ever was (but you will have to buy my cookbook to get it - or get it from a cafemom mom that has bought one) lol

This chocolate cake was a little dry but it still disappeared.  I would give it a 3 out of 5.

1 C butter, softened

2 C sugar

3 eggs

2 1/2 C cake flour

3/4 C firmly packed unsweeted cocoa powder

2 tsp. soda

1 tsp. baking powder

1/2 tsp. salt

1 1/2 C buttermilk

Preheat oven to 350 degrees.  Grease 2 (9" round) cake pans; dust with flour.

In a large bowl, beat together butter and sugar with an electric mixer on med. speed until light and fluffy.  Beat in eggs just until combined.

Sift together cake flour, cocoa powder, soda, baking powder and salt.  Add to butter mixture alternately with buttermilk, beating just until blended.

Divide batter between prepared pans.  Bake 35-40 minutes or until cakes test done.  Let cakes cool 10 minutes in pans, then unmold onto racks and let cool completely.  Frost with Buttermilk Chocolate Frosting.  Refrigerate until serving time.

BUTTERMILK CHOCOLATE FROSTING

4 T butter, softened

1/2 C unsweetened cocoa powder

1/2 C buttermilk

4 C powdered sugar

In medium bowl, beat together butter and cocoa powder with an electric mixer on low speed until smooth, 1 to 2 minutes.  Add buttermilk and powdered sugar and beat on high speed until smooth and fluffy.  Frost cooled cake.

Apr. 28, 2008 at 3:07 PM what was the cake i had at your house that day? THAT was good cake...  oh and btw - i just found your cookbook - dh had stashed it in a box when he was clearing off the kitchen table (doh!) so i am going to try out some more recipes :-)
